I have been blessed with two friends who I have known since my Freshman year of high school. We won’t talk about when that was! The three of us make it a point to get together for girls’ weekends away at least three times a year close to each of our birthdays. Sandi’s birthday was December 1st and she chose to spend it with us! Instead of meeting somewhere, we stayed at Becky’s house in Waco, TX and she had mapped out plans for our weekend.
Sandi drove us up via the toll road to avoid Austin traffic. Becky had prepared some excellent Minestrone and Jalapeno Mac n Cheese for our dinner. She was practicing on the Mac n Cheese recipe because her family has decided to leave turkey behind and have deliciously grilled steaks for Christmas dinner. Here is her shared recipe from Starvingkitten.com:
Jalapeno and Bacon Mac n Cheese
16 oz. macaroni – cooked simultaneously to be added when sauce is finished
1 lb Bacon diced, cooked, and drained
1 stick butter
4-6 diced Jalapenos
1/2 cup flour
3 1/2 cups milk
24 oz cheddar set aside 8 oz for the topping
Cook pasta and drain, plan for pasta to be ready around same time as sauce. Dice and cook bacon, then drain and set aside until last step of sauce also.
-melt the butter and saute the jalapeno with salt and pepper
-one jalapeno is soft, add flour while stirring until a brown roux is formed
-add milk and whisk until smooth
-bring just to a boil while stirring and remove from heat
-slowly stir in 16 oz of the cheese until smooth
-stir in bacon
-add to cooked macaroni and stir until well mixed
-pour into baking dish, cover with the rest of the cheese and bake uncovered for 30 minutes at 350 degrees until bubbly around edges and browning on top.
Then we headed to see Murder on the Orient Express at the movie theater. The movie was really good – I realized I had never really known the story line or read the Agatha Christie book.
The next morning we headed out early to get pedicures. This is always a treat for me. Check out that adorable child’s chair!
We needed fuel to get us through the day, so we stopped at Cafe Cappuccino for brunch. I had the Turkey Reuben Panini with spinach pecan salad and a pasta salad side. Yummy! Oh that Reuben was so good! Sandi lent me her cheaters because I couldn’t read the menu! They worked 🙂

I wanted to find a cute Christmas tee so Becky took us to a trendy boutique called Courtney’s. I found a t-shirt and also a fun shirt I call “the tablecloth.”
Becky’s son is getting married and so we went to Dillard’s next to look for rehearsal dinner dresses and jewelry. She found these earrings that she liked.

Next on the agenda was to go wine tasting at Valley Mills Vineyard’s Tasting Room. Sandi had the Bedrock – a Malbec blend and Becky and I had the Muscat Canelli. We had some pizza to go with it and a little salad and yum, yum! The owner said they would soon have the tasting room on site at the vineyard. That will be lovely because the photos I saw of their 40 acres is beautiful. We would have stayed for the live jazz music but we had more on our agenda.
Back to Becky’s house where we helped her decide on which dress to wear to the rehearsal dinner. We even used Amazon’s Outfit Compare. Then we created the Groomsmen Luncheon invitation on Zazzle.com. Sandi and I along with Becky’s son’s aunts, are hosting this luncheon the day of the wedding in Dallas. We wrapped the groomsmen’s gifts that will go on the table at the lunch. A black bow will be added to the top.

Becky’s husband has this awesome gazebo by the pool he calls his man cave. It was a gorgeous Sunday morning so us girls sat out there and visited and got caught up on the kid’s lives and had more wedding talk. After breakfast, again at Cafe Cappuccino because it was so good on Saturday, we headed back to San Antonio. Becky is always a fabulous hostess and sent me home with a Yankee candle called Home for the Holidays. I am burning it today as I write this. Yes, burning a candle just for myself! I tend to save candles for special occasions, but I’ve decided that’s dumb. Plus, the more you burn it the more your house takes on that scent.
